Celebrate Veganuary with The Coconut Tree’s Sri Lankan Roots Menu
This Veganuary, The Coconut Tree (TCT) is extending its vegan offering to celebrate the unique style of this cuisine with the return of its limited-edition Roots menu, available across January. Vegan meals are gaining traction, and for authentic family-run restaurants like TCT, plant-based dishes come naturally.
The Sri Lankan restaurant’s small plates allow diners to try their hand at new dishes without being fully committed – they can mix and match, exploring plant-based dishes in a flexible and communal setting where the pressure is off and new flavours can be explored. Highlights of the 2024 edition include Kale and Cabbage Sambol, Jackfruit Kotthu and Kaju Maluwa (a creamy cashew nut curry). The menu is available at all 9 UK locations, including Bath, Bristol, Cardiff, Cheltenham, Bournemouth, Birmingham, Oxford and Reading.
TCT is grounded in the authenticity of Sri Lankan cuisine, which is an excellent example of how these recipes can stand on their own and become second nature. It’s not just about swaps and substitutes, with many Sri Lankan recipes being naturally vegan.
The restaurant group is all about recreating sunny, laid-back island life on Sri Lanka’s coast, with recipes inspired by the founders’ roots and lived culinary experiences. For diners wanting to recreate some of TCT’s delicious vegan flavours from the comfort of their own kitchen, a selection of recipes is on offer, including the Beetroot Mallun, Jackfruit Kotthu, Cashew Nut Curry, and Tempered Pineapple.
